The structure of xanthan gum is based on the cellulose main chain of glucose units connected by β - (1-4), and the trisaccharide side of mannose glucuronic acid mannose is connected to every other glucose unit in the main chain. Some terminal mannose units are acetylated, while some internal mannose units are acetylated. Because of its unique rheological property and gel property, it is widely used as a food additive, thickener and stabilizer, and has been applied in the food and petroleum industries.
